Ginger Chicken or Adraki Chicken

We all know ginger as a wonder herb. It has not only been found to be useful in managing side effects of chemotherapy but is also being considered for stunting growth of cancerous cells. Ginger very easily walks into Asian kitchens. Had in a variety of forms julienned as a pickle, grated and cut in dishes, dishes garnished with ginger our dishes feel quite incomplete without ginger.

I am going to share a very simple and easy ginger chicken recipe that can be cooked for non vegetarian patients undergoing treatment for cancer as well as others. This is a modified recipe that is put together in our home. I love it for it is so easy and does not require much ingredients. Can be easily had as a snack or in the main course.

Now coming back to the ginger chicken recipe given below is a brief list of the ingredients as well as the procedure to make it.

Ingredients:

  •  Butter: 1 tablespoon
  • Cumin Seeds: 1 teaspoon (roasted)
  • Black Pepper : ½ teaspoon Freshly grounded
  • Ginger Root: 2 inch piece (2), peeled and washed. Grate some of it and cut juliennes from the rest.
  • Onion: 1 medium (finely chopped)
  • Boneless Chicken: 750 gms (washed and cleaned)
  • Red Chillie Powder: 1/2 teaspoon (optional)
  • Lemon Juice: 2 teaspoons

 Procedure:

  1. In a bowl put the chicken pieces, add the ginger grated ginger, freshly ground black pepper, salt and lemon juice.
  2. Set it aside for half an hour.
  3. Place a cooking pan on fire and heat the oil. Once the oil is hot add cumin seeds to it.
  4. When the seeds change color add the chopped onions to it.
  5. As the onions begin to pink add the marinated chicken to it and cook well.
  6. If adding red chilie powder add it at this stage.
  7. As the chicken begins to get done add the ginger juliennes.
  8. Garnish with fresh coriander.
  9. Transfer to a serving dish.
