Of course sometimes it is not easy to make a person going through chemotherapy eat for they often complain about nausea, intestinal gas and vomiting. A little bit of innovation and thought going into cooking can help overcome these obstacles and side effects. In the next few recipes we specifically discuss how ginger can be incorporated into a cancer patient’s diet. While enjoying its ample health benefits it helps pep up the taste of food.
We have already discussed that ginger a natural herb can not only pep any dish but is a wonder. Having long been used for nausea, motion sickness, cramps and heartburn it is also known to have anti-cancer properties. It works well to manage the side effects of chemotherapy. Let us add ginger to our everyday normal diet.

How about trying a ginger cake and especially since fresh ginger is easily available in the market these days. The lemon zest adds a fresh citrus taste to the cake.
Ingredients:
Butter: 1/2 cup
All purpose flour: 1 cup
Lemon Zest: 2 tablespoons
Lemon Juice: 1/6 cup
Baking Soda: 1/2 teaspoon
Salt: 1/4 teaspoon
Sugar: 3/4 cups (granulated)
Whole Milk: 1/4 cup
Eggs: 2
Fresh Ginger: 1 small piece (washed, peeled and grated)

The Procedure:

- The first step while making a cake is to get all the ingredients together and preheating the oven at 180oC.
- Butter the cake tin generously and spray some dried flour. It would be nice to chill the pan for a few minutes.
- In a medium size bowl add the flour, baking powder, grated fresh ginger, lemon zest and salt. Keep it aside it you get other things ready.
- Beat the butter and the sugar using an electric mixer till the mixture is light and fluffy. Add the eggs one by one and mix well. Once all the eggs are added add the lemon juice.
- Add some flour and whole milk to the butter and eggs small quantities. Gently fold the mixture. Make sure that it mixes well.
- Pour the mixture in the baking dish. Tap to level the batter.
- You will need to bake it for 40 to 45 minutes and can check using a toothpick. Allow the cake to cool before you pan it out.
- You can dust the cake with some confectioners’ sugar and grated ginger before serving.
A fresh, zesty gingery lemony cake is ready!
